    Theory and practice to precisely dial in espresso through adjustment of grind size, dose, yield, and extraction time to achieve a target recipe. Includes identification and correction of channeling, and recognition of differences in extraction behaviour between single-origin coffees and blends.

    Ability to operate behind the bar with efficiency and consistency through structured task sequencing, order anticipation, and problem solving. Involves simultaneous management of espresso extraction and decision-making, maintaining a clean and organised station through multitasking, and delivering beverages under time pressure without compromising quality or consistency.

    Milk Texturing & Latte Art

    Practice to obtain smooth, glossy milk microfoam and apply it in the preparation of espresso-based beverages. Includes control of aeration and temperature across different milk types, integration of milk with espresso, and execution of basic latte art patterns such as hearts. Also includes correct milk division to ensure appropriate foam distribution across coffee types.

    Theory of a standard café beverage menu beyond espresso-based drinks, including teas, chai, matcha, and alternative brewing methods, with emphasis on consistency and efficiency. Includes end-of-day procedures such as espresso machine and grinder cleaning, backflushing, purging, and general equipment maintenance to ensure proper reset and hygiene of the station.

About me

Maria Alejandra Gonzalez Bueno

I'm Maria Alejandra Gonzalez Bueno, a barista with 9 years of experience in specialty coffee and high-volume café environments.

For the past 8 years, I have focused on training baristas — both English and Spanish speakers — to develop strong technical and operational skills under real service conditions, including a clear understanding of espresso extraction and how to correctly dial in orders.

My approach is centred on building confidence, speed, and consistency by simulating high-pressure, peak-hour café environments, where precision and efficiency matter most.

Beyond the bar

Alongside coffee, I explore hand-drawn mandalas as a mindfulness practice rooted in presence, pattern, and inner exploration. This work supports a deeper connection to awareness, creativity, and calm beyond the café environment.

It has become a space for reflection and self-connection, where art and meditation meet in a therapeutic process of noticing, slowing down, and understanding the immense inner world.

For those who feel drawn to go further, I also share reflections and tools through my writing, where I explore mandalas, meditation, and inner awareness as pathways for personal exploration and transformation.
